Thanks for your question.
When creating a Chart, you don't have to use all the fields specified on the Report Building stage with the default Chart showing 0 fields/ nothing. This is different from the Report building stage, where every single field that you bring into the Report is intended to be shown. Hiding fields in the Report Building stage allows for underlying fields such as Date that tie in Data through Subqueries, or hidden calculations that show Analytic Functions (for example) to not affect the formatting of the table while providing further tools for visualising your Data in Charts.
So that I can understand a little better where your question comes from, would you mind providing further insight into your use case?

My particular situation i ran into is when I have advanced functions necessary to display the correct information and it shows on the "Series Selection" (see below).

You might have the 'Visible Series Selection' feature switched on.
Disabling this will not allow users to change the Chart output, by looking at individual metrics.

My apologies... I didn't explain. I do want to have some selection... I just want to eliminate the selection of the bottom two advanced functions. The picture below shows it better than my previous.

I understand where you are coming from now.
I've just tested on my end and can confirm that 'Hiding' the Field from the Report Builder Stage, also hides the field from the Chart Series Selection.
Is this what you are after? Or are you suggesting that you would like them to be individually configurable? If the latter, it looks like it is not possible and I can raise an Enhancement Request for you.

I've managed to replicate the behaviour you are experiencing in 8.0.4, as well as 8.0.5 and unreleased versions of 9. I was also able to reproduce the behaviour that I encountered last week, which means there is a bug at work here as well, but it might work in your benefit. What you can try is 'Showing' the fields in the Report Builder Stage, and then in the Chart Building stage, 'Hiding' the column values. I've been getting mixed results with this and I'm not sure if it's a consistent solution to your problem.
Another thing I did find, is that if you have a function defined within the Chart stage, that function will be hidden from the User when presented. However, I'm not sure if that helps with your use case.
This ticket will be focused on the Defect, which I have gone ahead and reported, and I have created a separate ticket here for the Enhancement Request.
